He asked everyone to save their parmesan rinds—the harder outer layer that you get when you purchase a block of the cheese at the grocery store—instead of throwing them away.
Because of its robust flavor that goes well with many Italian ingredients, parmesan is the ideal cheese to sprinkle over pasta dishes. Jamie also says you may use the rind for similar purposes.
He says, “That parmesan rind – often that goes in the bin,” as he cuts it off from the cheese wedge in the video. It tastes salty and is firm. How about if I insert it here, though? as he tosses it into a skillet of vegetables that is sizzling.
“You can use that as a flavor bomb for seasoning,” he said. In addition to having that umami flavor, parmesan skins are quite salty. But you shouldn’t need to season it at all when adding it to a soup.”
“Interestingly, after some nice simmering, that hard, inedible parmesan rind, actually softens up,” Jamie said, spooning the soup into a bowl along with the rind.
“And then you can actually slice it up and eat it, fry it and make it crispy – it’s very, very cool.”
